Shrimp Souffle’ Recipe

1 cup small shrimp cooked
1 cup milk
3 tablespoons butter
3 tablespoons flour
Paprika
Cayenne pepper
Salt
3 eggs

Make a cream sauce with milk, flour, and butter. Beat egg yolks seasoned with paprika, cayenne pepper, and salt. Pour into thickened cream sauce. Add 1 cup cooked shrimp. Beat the egg whites until stiff and fold into mixture. Place in preheated oven at 325° for 10 minutes. Turn heat up to 350° and cook 20 minutes. Serve at once.

Serves 4-6.
