Seafood Casserole Recipe
2 cups V-8 juice
2 cups mayonnaise
2 cans (6 1/2-oz.) crabmeat or 2 1/2 cups fresh crabmeat
2 cups cooked rice
4 tablespoons butter
2 cans (5-oz.) shrimp or 2 cups cooked fresh shrimp
2/3 cup green pepper
Salt and pepper to taste
2 cups fresh bread crumbs
1 cup slivered almonds
Blend juice and mayonnaise. Add rice, chopped green pepper, crab meat, shrimp, salt and pepper to taste. Mix just until ingredients are well distributed. Spoon into greased 2 1/2 quart casserole.
In a small pan, melt the butter and add crumbs and almonds. Mix with fork until crumbs are coated with butter. Spoon evenly over mixture in casserole. Bake at 375° until bubbly and top slightly brown (about 30-40 minutes). Serve immediately.
