2 cups each of clam and chicken broth
1 large avocado
salt
cayenne
4 Tbsp. of best sherry
salted whipped cream
chopped pistachio nuts

Club Luncheon Hit

Combine 2 cups each of clam and chicken broth …the canned kind may be used. Bring to a boil. Press thru
a fine sieve 1 large avocado; add to it salt and cayenne to taste. Add the avocado and 4 Tbsp. of best sherry to the hot broth. Ladle the soup into bouillon cups. Top each with a spoonful of salted whipped cream and sprinkle very lightly with chopped pistachio nuts.

JUST A QUICKIE One part of sieved avocado to 5 parts of boiling chicken broth; then add a dash of sherry.
