1/2 C. butter
2/3 C. crushed saltine crackers
1/4 C. grated Parmesan cheese
1/2 tsp. basil leaves
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. garlic powder
1 lb. sole or perch fillets (frozen fish may be used, thawed and drained)
Preheat oven to 350°. In 13×9″ baking dish, melt butter in preheated oven 5 to 7 minutes. Meanwhile, in 9″ pie pan, combine cracker crumbs, Parmesan cheese, basil, oregano, garlic powder and salt. Dip fish fillet in butter and then in cracker crumb mixture. Arrange fish in dish. Bake in 350° oven for 25 to 30 minutes. Serve immediately.
