Caribbean Stewed Shrimp Recipe

2 pounds green shrimp, shelled
3 tablespoons lime juice
1 onion, thinly sliced
2 tomatoes, peeled & diced
1 clove garlic, minced
1 tablespoon chives
1 teaspoon thyme
3/4 teaspoon curry
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup butter


Ginger Rice

2 tablespoon butter
1 cup raw rice
1 teaspoon ground ginger
1/4 teaspoon pepper
2 cups water

Marinate shrimp with lime juice, onion, tomatoes, garlic, chives, and thyme for about 1 hour. Melt butter and add shrimp, curry, salt, and pepper. Simmer until shrimp are done. Serve on Ginger Rice.

Serves 4.


Ginger Rice

2 tablespoon butter
1 cup raw rice
1 teaspoon ground ginger
1/4 teaspoon pepper
2 cups water

Melt butter in a heavy pan with a lid. Saute’ rice until slightly transparent. Add water, ground ginger and pepper. reduce heat, cover, and simmer until the liquid is absorbed.
