choice of fish (mackerel, flounder, or bass)
salt and pepper
mayonnaise
tomato
spring onion
bacon
Use fish of your choice (mackerel, flounder, bass). Cover a shallow sided cookie sheet with aluminum foil. Place fillet of fish, skin side down on the foil. Salt and pepper to suit. Garnish meat side quite heavy with mayonnaise. Cover the meat with 1/4″ tomato slices. Sprinkle with finely chopped onion (spring onion is best). Place in cold oven. Turn heat to 500°. Bake until oven reaches 500°. Remove from oven. Switch over to broil. Cover each fillet with strip of bacon. Return to oven and broil until bacon is completely done.
