ABD'de T&#;rk bilim adamı dilde koku alıcıları bulunduğunu keşfetti
ABD’de yaşayan Türk bilim adamı Dr. Hakan Özdener, dilde sadece tat değil koku alıcılarının da bulunduğunu keşfetti.
Tat ve koku alanında dünyadaki tek araştırma kuruluşu olan Monell Chemical Senses Merkezinde çalışan Dr. Özdener, çalışmaları ve Chemical Senses bilim dergisinde yayınlanan son makalesi hakkında AA muhabirine konuştu.
Türkiye’de Ondokuz Mayıs Üniversitesi Tıp Fakültesini bitirdikten sonra Hindistan’da Genetik Mühendislik ve Bioteknoloji (ICGEB) Merkezinde hepatit E virüsü moleküler biyolojisi üzerine doktora tezini tamamlayan Özdener, ayrıca ABD Philadelphia Temple Üniversitesinde de halk sağlığı üzerine master öğrenimi gördü.
Özdener, 16 yıldır Monell Merkezinde tat ve koku alma hücreleri üzerine yoğunlaştığını belirterek, "Son 6 yıldır insan dilindeki tat alma dokularında koku alıcılarının da bulunduğunun tespiti üzerine çalışıyordum. Çarşamba günü yayımlanan makalem, bu anlamda, dünyanın dört bir yanından çok olumlu tepkiler aldı." diye konuştu.
Oğlunun sorusu ilham verdi
Bu araştırmaya, oğlunun, yılanların neden havayı koklamak için dilini çıkardığı sorusundan ilham alarak başladığını ifade eden Özdener, insan dilinde de koku alıcılarının bulunduğunu tespit ettikten sonra buna kendisinin de uzun bir süre şüpheyle yaklaştığını vurguladı.
Özdener, şunları kaydetti:
"Tespitimi doğrulamak için 6 yıl çalıştım. Sayısız deney ve inceleme yaptım ama sonuçta insan burnunda bulunan yaklaşık civarındaki koku alıcı reseptörlerin, hemen hemen aynı oranda insan dilinde de yer aldığını teyit etmiş oldum yani burun kokuya ne kadar hassas ise aslında tat hücrelerinin de aynı derecede kokuya hassas olduğunu gördüm.”
"Gıda ve sağlık sektörü için önemli bir buluş"
Daha önce koku ile tadın iletişiminin beyinde olduğunun düşünüldüğünü ifade eden Özdener, son çalışmayla dildeki tat reseptörleri ile koku reseptörlerinin sadece beyinde değil ağızda da ilişki içinde olduklarını öğrendiklerinin ve bunun gıda ve sağlık sektörü için önemli bir buluş olduğunun altını çizdi.
"Dil ve burunda aynı oranda koku alıcı reseptörler varsa niye burunda olduğu gibi dil ile koku alınamıyor?" şeklindeki soruyu Özdener, "Burundaki koku hücrelerindeki sinir uçlarının beyinde gittiği nokta ile ağızdaki tat hücrelerindeki sinir uçlarının beyinde gittiği noktalar çok farklıdır. Bu nedenle burundaki hücrelerin algıladığını koku olarak hissediyoruz. Ağzımızdaki tat alıcı reseptörlerin beyne gönderdiği sinyalleri de tat olarak algılıyoruz." diye cevapladı.
Özdener, şöyle devam etti:
"Peki şunu da sorabilirsiniz, ağzımızdaki koku reseptörleri beynimizde nereye gidiyor? Bunun cevabı henüz bilinmiyor çünkü ilk defa koku reseptörlerinin tat hücrelerinin içinde olduğunu keşfetmiş olduk. Bu konuda çalışmalar devam edecektir.
Bu buluş özellikle insan sağlığı ile ilgili ciddi problemler olan şişmanlık, obezite, kalp damar rahatsızlıkları, yüksek tansiyon ve inme gibi hastalıkların sebepleri olarak gösterilen gıdaların içindeki tuz, şeker, yağ miktarının azaltılmasında faydalı olacaktır. Koku moleküllerinin insanda tat alma hissinin şiddetini değiştirdiği bilinmektedir. Eğer doğru koku molekülü seçilirse insanlar yediklerinden aynı lezzeti tadabilirken, yiyeceklerin içerisindeki, tuz, şeker ve yağın miktarını azaltma imkanı doğacaktır. Bu da insan sağlığına olumlu etkileri olacak ve gıda endüstrisi için son derece önemli bir gelişmedir."
Özdener, ’de yayımlanan bir başka çalışmasında da daha önce diğer bilim adamlarının "bunun yapılması mümkün değildir" dediği, insan tat hücrelerini dünyada ilk defa vücut dışında üretmeyi başardığını hatırlattı.
"Bilim eğitimi evde başlar"
"Farklı bir ülkede yaşasam da ben bir Türk'üm ve bundan her zaman gurur duydum." diyen Özdener, bilim eğitimi konusunda özellikle anne babalara şu tavsiyelerde bulundu:
"Bilim eğitimi sadece üniversitede başlamamalı. Bilim eğitimi evde başlar. Anne babalar, çocuklarının merak ve öğrenme duygusunu arttıracak şekilde okumalara ve küçük ev deneylerine teşvik etmelidir. Bilim insanı yetiştirilmesi için ilk şart olarak çocuklara ve gençlere bilim sevdirilmelidir. Çocuklar bu alana yönlendirilince zaten kendi imkanlarını bir şekilde oluşturuyorlar."

"Force majeure" term will be regarded as outside of the concerned party's reasonable control and any situation that "Turkiye Klinikleri" cannot prevent even though it shows due diligence. Also, force majeure situations include but not limited to natural disasters, rebellion, war, strike, communication problems, infrastructure and internet failure, power cut and bad weather conditions.
8. LAW AND AUTHORISATION TO FOLLOW
Turkish Law will be applied in practicing, interpreting the hereby "Terms of Use" and managing the emerging legal relationships within this "Terms of Use" in case of finding element of foreignness, except for the rules of Turkish conflict of seafoodplus.info Courts and Enforcement Offices are entitled in any controversy happened or may happen due to hereby contract.
9. CLOSING AND AGREEMENT
